It’s been around but you’ve probably never heard of it. ‘nduja is one of the little miracle sausages found on the tables in Calabria, Italy. Made from stuff we shall not mention but combined with some love, magic and some special spices, ‘nduja makes it’s claim as one of the best ingredients to be rediscovered in years! Here’s a recipe that’ll add a bit of spice to your life. Sugo al ‘nduja (Tomato Sauce with ‘nduja).

For now, we’re in flux… in purgatory! The holiday season is over and we’re hunkering down for the long haul of winter. Some of us are taking to the slopes and rinks, others are finalizing their plans of a great southern adventure or lounge act! What better way to suck-it-up than make some Eggs in Purgatory (Uova in Purgatoria) or Shakshuka, as it’s known in Tunisia and other northern African nations.

As Christmas Eve approaches, people tend to partake in the cultural festivities of their ancestors. The Italian tradition of the Feast of the Seven Fishes takes place on Christmas Eve, when we fast and eat seafood instead of meat. We’re always looking for different ideas to help fill up the count of different fishies we serve. While Pasta di San Giuseppe (St. Joseph’s Pasta) is traditionally served on… well, St. Joseph’s Day (just before Easter), we feel it’s nice to add to your Christmas Eve Festive Fishie Fun!
