Guacamole

Guacamole

Guacamole is an unsung hero of ‘Mexican’ cuisine that has ancient roots direct from the Aztecs. Even it’s name Guacamole is derived from ‘Nahuatl,’ an ancient dialect of the Aztec language. The influence of the avocado is great and it’s extremely healthy!

2 ripe avocados
2 tbsp olive oil
2 tbsp lime juice from (2 limes, if small)
1/8 onion, finely diced
1-2 cloves garlic, crushed and mashed
1/2 teaspoon chili powder
1 jalapeño, include seeds if you like (chopped finely)
1 firm plum tomato, chopped
1/2 cup fresh cilantro, chopped
salt and pepper – to taste

Directions
1. Mash together the ripe avocados with lime juice.

2. Add the jalapeño, onion and garlic

3. add the chili powder and salt

4. Toss in the olive oil, tomatoes and cilantro and fold together.

5. taste and adjust seasoning
