Red Cabbage Cole Slaw

Slaw… need we say more?
1 head red cabbage
1/4 red onion
1 cup apple cider vinegar
4 tablespoons sugar
1/2 cup extra-virgin olive oil
Salt and pepper
Dill or Caraway seeds (optional)
1. Shred the cabbage, carrots and onions in a food processor, mix in a very large bowl
2. In a blender mix vinegar, sugar, olive oil, salt and pepper to taste + Dill or Caraway seeds (optional).
3. Toss dressing into slaw and mix well.
4. Wait for the flavors to meld, about an hour
