Brussels Sprouts with Bacon

Brussels Sprouts, those little balls of  vegetables that people love or hate. As our taste buds mature and our senses open to new and savory fare many of us embrace this tasty pod! Here’s the classic B&B combination… yes, bacon does make things better!

Ingredients
1.5-2 lbs Brussel Sproats, cut in half
4-5 strips bacon, cut up into small pieces
2-3 cloves garlic, diced
3 tbsp olive oil
1/2 cup Chicken stock (try our homemade version)
1/8 cup balsamic vinegar
2-3 tbsp unsalted butter, crumpled
juice from 1/2 lemon
Salt and Pepper – to taste
Peperoncino Fiocchi (hot pepper flakes) – optional

Directions
1. Cook bacon and set aside.

2. Preheat oven to 350F. Mix all ingredients except the cooked bacon, and place in cooking pan.

3. Cook for about an hour mixing every 10 minutes or so.

4. Remove and toss with lemon juice, flat-leaf parsley and the precooked bacon bits.
