Eggplant and Red Lentils in Tomato Sauce

Need an simple side dish that packs a nutritional punch? Here’s something we created with eggplants, red lentils and tomatoes, it makes a great vegetarian main or a side dish for grilled meat.

Ingredients
1 large Eggplant, cut into 1 x 2 inch pieces
1/2 cup red lentils (uncooked)
1 28 oz can plum tomatoes, roughly cut (or 6 ripe plum tomatoes)
1/2 onion, chopped
2-3 cloves garlic, diced
1 cup loosely-cut fresh Italian flat leaf parsley
1/2 cup white wine (Pinot Grigio)
olive oil
grape seed oil, or other high-temperature oil  (for frying the eggplant)
fresh lemon juice (1/2 medium-large lemon)
peperoncino fiocchi (hot pepper flakes) – optional
salt and pepper – to taste

Directions
1. In a large frying pan, preheat a combination of grape seed and olive oil and fry the eggplant. Set aside when cooked.

2. In a medium sized dutch oven sauté the onions, garlic and hot pepper flakes until the onions become translucent.

3. Toss in the dry lentils and let cook for a few minutes.

4. Add the 1/2 cup of wine, let the lentil absorb and let cook for a 5 or 10 minutes, mixing well.

5. Add the roughly cut tomatoes and let simmer for 10 minutes or so.

6. Add the lemon juice, let come to a simmer and then add some salt and pepper to taste.

7. add the pre-cooked eggplant

8. add the chopped parsley

9. left simmer until the lentils become the consistency you like.
