Fava Beans in Tomato Sauce

We fell in love with this simple combination of Fava and Tomatoes when a friend introduced this dish to us. We add a little Italian flair to this typical Greek peasant dish.

Ingredients
2 1/4 cups (500 g) dried Fava Beans (soak dry beans for 12+ hours)
1/2 onion, diced
2 cloves garlic, diced
1 28 oz. can hand crushed San Marzano tomatoes or  use  3-4 pints cherry tomatoes
1/2 cup white wine
3 tbsp olive oil
1 tsp oregano
1/2 lemon, juice,
Salt and Pepper – to taste
Peperoncino Fiocchi (hot pepper flakes) – optional

Directions
1. In a frying pan, heat 2 tbsp olive oil and sauté onions with the optional hot pepper or Peperoncino Fiocchi (hot pepper flakes). When onions begin to turn translucent, add the garlic.

2. Once the garlic begins to soften add the 1/2 cup of wine.

3. Add a couple of bay leaves and let come to a simmer

4. Add the hand-crushed tomatoes and let come to a simmer.

5. Once simmering, add the oregano, salt and pepper.

6. Add the lemon juice and let simmer for 5-10 minutes

7. Add the fava beans and let cook for about 30-60 minutes.
