Fried and Mashed Plantain

One of the signature side dishes of Puerto Rican cuisine is Mofongo. Mofongo is simply fried mashed plantain with olive oil, garlic, salt and pepper. It’s a perfect accompaniment to Puerto Rican dishes like crackling pig, pulled pork, shrimp or chicken. The key is to use good ingredients and fairly ripe plantains, the sweetness rings through and compliments the flavorful meat or fish.

Ingredients
2-4 plaintain
1-2 cloves garlic
olive oil

Directions
1. Slice the plantain into 3/4-1 inch slices and fry using olive oil, fry sliced plantains but do not brown, Remove and place on paper towels.

Mortar & Pestle
olive oil
crushed garlic
pinch salt
pinch of black pepper
2-4 pieces of plantain

Directions
1. Before using a mortar and pestle to mash the plantain, use a flat edge of a broad knife to slightly crush the fried plantain.
