Red Lentils and Zucchini

There’s so much to LOVE with lentils, they’re nutritious, hearty, tasty and simple to make. Packed with essential vitamins and minerals, including B vitamins, iron, magnesium, potassium and zinc. In a nutshell, they’re pretty super. Lentils are also one of the earliest domesticated crops and have a staple in Mediterranean and South Asian cuisine. Yes, we’re been eating them for centuries.

Lentils are not just brown, they’re also green, red and yellow. Brown lentils are common in Mediterranean dishes and the green, red and yellow are primarily used in South Asian (Indian) cuisine. Our dish leans toward the Mediterranean style but uses the more supple red lentil, brown lentils are a bit more dense.

Ingredients
3-4 grey or yellow zucchini, cut into cubes
(You can use regular green zucchini but the grey and yellow are a bit sweeter)
1 cup red lentils
1 small onion, diced
1-2 cloves garlic, diced
1 cup roughly cut, canned tomatoes (skinned ripe plum tomatoes will work too)
1 cup dry white wine (pinot grigio)
1 cup water
1/2 lemon, juiced
olive oil
Fresh basil (or frozen)
Fresh flat-leaf parsley
Salt and Pepper – to taste
Peperoncino Fiocchi (hot pepper flakes) – optional

Starch
Brown rice

Directions
1. On medium heat, sauté the onions in 2-4 tbsp olive oil, as the onions become translucent, add the diced garlic with the optional Peperoncino Fiocchi (hot pepper flakes).

2. Once the garlic softens, add the cup of white wine, bring to a simmer.

3. As the base simmers, add the lentils, mix well as they will absorb the wine.

4. when the lentils have absorbed most of the wine, add a cup of water and let return to a simmer.

5.  Season with a bit of salt and pepper.

6. add the zucchini, mix well and cover. Mix as the zucchini cooks.

7. add the cup of roughly cut plum tomatoes.

8. Let cook, taste and season with salt and pepper to your liking.
