Potatoes – Roasted Rosemary

The classic Roasted Potatoes with Rosemary is one of our favorite go to sides. It quickly has become everyone’s ‘favorite’ and we’re sure it will become one of your favorites as well.

2 lbs potatoes, quartered
1/4 cup Chicken stock (try our homemade version)
1/2 onion, sliced
2 cloves garlic, diced
2 tbsp unsalted butter
2 tbsp olive oil
1/4 lemon
rosemary, fresh is preferred
Peperoncino Fiocchi (hot pepper flakes) – optional
Salt and Pepper to taste
Flat-leaf parsely

1. Bring the potatoes (with 1/4 lemon) to a boil for 1-minute. Pre-heat the oven to 375F

2. Remove the potates from the water and toss with the chicken stock, olive oil, onions, garlic, rosemary, salt, pepper and (optional) hot pepper flakes.

3. Put potatoes into a baking pan and cook on 375F for about 45 minutes, mixing every 10-15 minutes or so.

4. For the last 15 minutes or so, broil the potatoes until they brown. Mix well while browning.

5. Remove the potatoes and toss them with the  fresh flat-leaf parsley.
