Ah, the summertime, the sun, the heat, the flowers blooming…  wait… are those zucchini blossoms? Mmmmmmm, zucchini blossoms. The delicate flavor of the blossoms whisper to me and reminding me about my childhood summers and conjure up memories of my grandmother.

Since the blossoms are delicate and only available seasonally, we make it a point to take advantage and grab ’em every chance we get. To tell you the truth, it’s become an obsession especially when they’re almost impossible to find in regular grocery stores and are rare to find in specialty stores. Bottom line, if you see them. pick up a pack or two.

This is seasonal cooking at it’s finest, if you miss the window of opportunity, you miss it. Fritters are one of the most common ways to use the blossoms, but other variations include stuffed blossoms with ricotta, Risotto (Risotto ai Fiori di Zucca), pizza (as a topping) and pasta of course!

Ingredients
8 to 10 zucchini blossoms (or as many as you want to make)
1/3 cup flour
1/2-3/4 cup sparkling water (or beer)
1/2 tsp baking soda
salt and pepper – to taste
white pepper – to taste
avocado oil
olive oil
chives – optional

Directions
1. Remove pistils and sepal from blossoms

2. Mix batter, dip and fry
