Gremolata (for Osso Buco)

Gremolata or gremolada is a chopped herb condiment made of lemon zest, garlic, parsley and anchovy. It is a traditional accompaniment to the Milanese braised veal shank dish osso buco alla milanese. Gremolata can also used as a general garnish for meat dishes.

1-2 anchovy fillets, finely diced (traditional) – optional
1/4 cup finely chopped flat-leaf parsley
1-2 tbsp lemon juice
2 tbsp olive oil
1 tbsp lemon zest, from 1 lemon
3-4  cloves garlic, crushed and pressed
Pecorino Romano – grated
Salt and Pepper – to taste

1. Mix all ingredients together except for the grated cheese, salt and pepper.
2. Taste and add enough grated Pecorino, salt and pepper to your liking.
