Pesto – Pistachio and Zucchini Blossoms

Typical nuts that can be found in Italy are pine nuts, pistachio, almonds, walnuts and hazel nuts. Pesto can be made with all these nuts and make for different flavors for different purposes. The pignoli (pine nuts) are the classic nut used in pesto with basil (Pesto – Basil and Pine Nuts), but another ‘native’ nut has become popular, the pistachio. The pistachio’s flavor marries well with basil (Pesto – Pistachio and Basil) but also with another Italian delicacy, the Zucchini blossom. The lovely bright color and slightly tangy and fresh flavor of pesto made with zucchini blossoms and pistachio make for a beautiful dish.  

Ingredients
1 small clove garlic
3-4 cups fresh zucchini blossoms, pistle and stems removed
Flat-leaf parsley
1/2 cup pistachios, shelled
1/2 cup (2-3 oz) grated Pecorino Romano and/or Parmesan cheese.
Lemon juice (1/4-1/2 lemon)
1/2-3/4 cup olive oil
Salt – to taste

Food Processor Method
1. Put the garlic, parsley, pistachio, salt and zucchini blossoms into the food processor.

2. While mixing add the cheeses, lemon juice and olive oil. Mix until a nice consistency is achieved.

Mortar Method
1. ut the garlic, parsley, pistachio, salt and zucchini blossoms into the mortar. Using the pestle, grind into a paste.

2. When the consistency of the paste is fairly even, add the cheese and lemon juice, continue to grind them together.

3. Add the olive oil slowly, blending it into the pesto evenly.
