Along with the dough (you should really try our take on the Napoletani VERA dough), the tomato sauce is a key ingredients to making stupendous pizza… A pizza sauce should be simple and basic. It should also complement a variety of toppings from the simplest as well as the most complex.

28 oz. canned plum tomatoes (hand-crushed)
(3.5 cups peeled, chopped and drained Italian Plum Tomatoes)
6 oz. can tomato paste – optional
1 cup white wine (Pinot Grigio)
1-2 bay leaves
3 tbsp olive oil
1 small onion, chopped finely
1-2 cloves garlic, chopped finely
1/2 teaspoon dried oregano (or use 1/4 cup fresh)
1/2 cup fresh basil
Salt and Pepper – to taste
1/2 lemon (juiced)
a pinch of sugar – if needed

1. In a medium sauce pan, heat 3 tbsp olive oil and sauté the onions and garlic until onions become slightly transparent and garlic begins to brown.

2. Add 1 cup of wine and let come to a slow boil.

3. Add the tomatoes and let return to a boil, add the bay leaves, lower heat and let simmer for about 10 minutes.

4. Add the fresh  basil, oregano, salt and pepper and let cook for a final 10-20 minutes.
