Soffritto

The soffritto is where much of Italian-Style cooking begins. The soffritto is the starting point of many pasta sauces, soups, stews, and risotto. It’s usually very basic and simple. The key is in the method of frying the the onions until translucent and then adding other ingredients accordingly. Soffritto literally means ‘under-fried’ or ‘slowly-fried,’ which is how it’s done.

Basic ItalianStyle Soffritto
soups, stews, risotto, marinara sauce and other ragú (Bolognese) sauces, especially vegetable or chicken (poultry), and fish soups, and more
  • 2-3 tbsp extra-virgin olive oil
  • 1 onion
  • 2 carrots
  • 2 stalks celery
  • 2 cloves garlic (recommended but optional)
    * as an example, the regional Tuscan soffritto does not include garlic
Basic Southern Italian-Style Soffritto
soups, stews, risotto, sugo, marinara and other ragú (but not Bolognese) sauces, mostly red meat soups, and more
  • 2-3 tbsp extra-virgin olive oil
  • 1 onion
  • 2 cloves garlic (recommended but optional)
  • peperoncino fiocchi (hot pepper flakes) – optional
