Strawberry Rhubarb Sauce

A few things bring visions of rural country life like strawberries and rhubarb. To salute Canada’s food island, Prince Edward Island (PEI) we’ve created this special sauce which works especially well drizzled over ice cream or with strawberry shortcake!

Ingredients
2 pints (32 oz) strawberries, cut
1 cup rhubarb, chopped into small pieces
1/2 cup orange juice
3/4 cup natural sugar
1 1/2 tsp vanilla extract
1/2 lemon, juice
1/2 lime, juice
dash salt
dash cinnamon
add corn starch if you want a thicker sauce

Directions
1. In a medium sized  sauce pan, on low heat, combine the orange juice, vanilla extract and natural sugar. Mix frequently.

2. When the sugar has melted add the rhubarb and let cook for 5 minutes

3. When the rhubarb begins to break down add the strawberries, keep mixing and let cook for 5-10 min

4. Add the lemon juice and lime juice

5.Add a bit of cinnamon and salt, reduce heat and cook, stirring occasionally, around 10 minutes.

6. Remove from heat and mash the strawberries and rhubarb, if you have an immersion blender, use it!
