Auntie Annie’s Spinach and Ricotta Roll

My great aunt (grandmother’s younger sister) loved to bake, and while she was most famous for her cookies, cakes and pies, this savory treat was always a highlight. You can either make your own dough or buy some  from your local baker.

Pizza Dough: Zio’s VERA Pizza Napoletana
Olive Oil 

Classic / Traditional Filling
Ricotta Mixture (Savory)
Spinach
Olive Oil

Pepperoni Filling
Pizza Sauce
sliced pepperoni
Mozzarella or Fior d’Latte (fresh mozzarella)
Fresh basil

Margherita Filling
Pizza Sauce
Mozzarella or Fior d’Latte (fresh mozzarella)
Fresh basil

Directions
1. Roll out the dough, close to a rectangle as you can.

2. Spread the Ricotta Mixture or sauce evenly.

3. Top with Spinach  (or other toppings), drizzle with a bit of olive oil.

4. Roll like a ‘log or jelly roll.’ Seal the seam

5. brush with olive oil, bake at 300F – 350F degrees until golden Brown.
