Primo

The Primo is concidered the first course of the meal and typically includes dishes such as risotto, pasta, polenta, casseroles or soup. Serving sizes are typically small allowing room for the other courses 🙂

Meals don’t often have as many courses but maybe done for a holiday meal or another type of special occasion. Our basic rule is, if the meat can be served alone, then we’ll call that a Secondo.
