Pasta – Cacio e Pepe
Pasta with Cheese and Pepper

This simple and extremely tasty ‘primo’ compliments many dishes especially grilled meats and fresh vegetables. Cacio e Pepe is a classic Roman dish that seemingly predates the introduction of the ubiquitous tomato into Italian cuisine.

1/2 lb. spaghetti or spaghettini
2-3 tbsp unsalted butter
1/2 cup Pecorino Romano Cheese, grated
1 tsp Freshly ground black pepper
Flat-leaf parsley
Peperoncino Fiocchi (hot pepper flakes) – optional
Salt (if needed)


1. Prepare your spaghetti/spaghettini al dente

2. Mix in butter, black pepper and cheese

3. Garnish with hot pepper flakes (optional) and fresh flat-leaf parsley
