While visiting one of our favorite farmer-run markets (19th Avenue Farmer’s Market), we were introduced to a very beautiful and interesting vegetable, the Romanesco Cauliflower. This unique vegetable resembling cauliflower with ‘fractal’ head and is also predominately green in color. It is an ancient Italian variety that predates cauliflower, rapini and broccoli. It’s flavor is fairly mild, softer and sweeter than cauliflower with a slightly nuttier flavor. It can be eaten raw or cooked as you would cauliflower or broccoli. Since our discovery, it has become one of our favorite fall vegetables (it seems only to be available during the fall and early winter).

Ingredients
2 medium sized chicken breasts (skin removed) cut into medium sized cubes (1-inch) 1 head Romanesco Cauliflower, broken up into pieces (about 1 – 2 inches)
1 medium Onion or 1/2 large, diced
2 cloves of garlic, diced
3/4 cup roasted red peppers cut
1/2 lemon (freshly squeezed juice)
Fresh Basil (or frozen)
Peperoncino Fiocchi (hot pepper flakes) (optional)
2 bay leaves
1 cup white wine (Pinot Grigio)
2-1/4 cups Chicken stock (try our homemade version)
Salt and Pepper
1/4 – 1/2 cup grated Pecorino Pecorino cheese

Directions
1. Marinate the chicken cubes in 1/3 cup white wine and 1/8 cup Olive Oil for about an hour.

2. Drain marinated chicken and dredge in flour, salt and pepper, coat completely.

3. Heat 2-3 tablespoons olive oil in a medium to large sauce pan. Cook onions, garlic and hot pepper flakes until the onions begin to turn translucent and the garlic begins to soften.

4. Add the chicken and let cook on all sides.

6. Add 1 tablespoon butter, let melt and then add 3/4 cup of white wine.

5. After letting come to a simmer, add about 1 cup chicken broth, return to simmer and add the bay leaves.

6. Add the cut up Romanesco Cauliflower, mix well and cover.

7. Add another tbsp of butter and the left over marinade.

8. Then, after simmering a few minutes, add the remaining cup of Chicken broth and lemon juice, cover and let come to boil.

7. Add chopped fresh basil and pecorino Romano cheese, salt and pepper to taste. Let simmer on low for 5-min.

8. Finally, add the roasted red peppers, mix well and cover. Lower heat and let simmer while cooking the pasta (Cavatelli).

Serve with chopped Italian flat-leafed parsley on top.
