Einkorn Pilaf – wheat berries

Einkorn is an ancient grain that hasn’t been cultivated nearly as much as the other varieties of wheat grains such as the emmer and Splet varieties. The good thing about einkorn is it’s nutritional value compared to other wheat. It has a relatively high content of protein, vitamin B6, potassium,  phosphorous and even caroteniods (rare in grains and very healthy)! Einkorn can also be digested better because it is ‘genetically primitive’ and has less gluten! A typical way of preparing the einkorn wheat berries is to cook in water until soft, sometimes soaking overnight helps the process. We like to use stock instead of water.

This maybe a great stand-alone dish but you can also mix with other dishes like our Rapini and Roasted Red Peppers creating … Rapini and Einkorn Wheat Berries

Ingredients
1 cup Einkorn wheat berries
1 small shallot (or 1 clove garlic and 1/2 onion)
3 cups chicken stock
2 tbsp olive oil
Peperoncino Fiocchi (hot pepper flakes) – optional
Flat-Leaf Parsley
Salt and Pepper – to taste

Directions
1. On medium heat, sauté shallot (or garlic and onion) with optional Peperoncino Fiocchi (hot pepper flakes) in 2 tbsp olive oil.

2. Add einkorn wheat berries and mix well, let cook for  1 or 2 minutes
Add the einkorn
3. Add 1 cup of stock and let the einkorn absorb most of it, then add the second cup of stock. Follow the same procedure for the last cup of stock

4. Let all of the liquid reduce, taste and add salt and pepper to taste

5. Toss in fresh flat-leaf parsley (if making Rapini and Einkorn you can omit the parsley)
