Liguine and Clams with Pistachio Pesto
Linguine e Vongole al Pesto di Pistacchio

On our last trip to Italy, I was obsessed with pasta and clams. Either lunch or dinner I would choose pasta with clams. Here’s our little salute to that trip to Calabria.

Ingredients
1-2 lb. fresh small clams, cleaned and scrubbed
Pesto – Pistacchio (try our recipe)
1/2 cup white wine
salt – to taste
pistachio – crushed
Flat-leaf Parsley
peperoncino fiocchi (hot pepper flakes) – optional

Pasta
Linguine

Directions
1. While cooking the pasta, heat 1/2 cup of Pinot Grigio (dry white wine) mixed with 2-4 tbsp Pistachio Pesto in a sauce pan.

2. When the wine and pesto begin to simmer, add the clams and cover.

3. Once the clams open and the pesto sauce has reduced, add a ladle of pasta water

4. As the sauce and clams simmer, taste and add salt, if needed.

5. Add the cooked pasta and mix well.
