As the story goes, I was a very fussy eater when I was young but not as finicky as my cousin. During a family holiday dinner we were served Pasta Con Sarde (Pasta with sardines). I immediately declined until my cousin also said he didn’t want to eat it. Well, I would have none of that, ‘let me tr,’ I said. The rest is history, I discovered I really liked Pasta Con Sarde and my world has never looked the same since. I don’t usually post recipes that include references to specific type of a prepared mix, but this is a little different…

Tonight for #SanGiuseppeDay we make #PastaConSarde

1 can 8.5 oz. Pasta Con Sarde Seasoning (we used Cuoco Brand Seasoning for Macaroni with Sardines).
1 can plum tomatoes (hand crushed)
1 can tomato paste (optional)
1/2 onion, diced
2-3 cloves garlic
3/4 cup sliced Cremini mushrooms
1 green pepper
1 red pepper
3 tbs extra-virgin olive oil
1 cup white wine (pinot grigio preferred)
1 cups vegetable broth (or water)
Italian Flat leaf parsley
Salt and pepper
1/4 cup grated Pecorino Romano
Peperoncino Fiocchi (hot pepper flakes) (optional)
Italian-style seasoned breadcrumbs

Pasta (recommended)
Liguini or Spaghettini

1, Heat 3-4 tbsp of olive oil in a large Dutch oven and sauté the onions until showing signs of translucency, then add the garlic and Peperoncino (optional). Cook until the garlic softens and begins to brown.

2. Add red and green peppers and let cook until tender.

3. Add the mushrooms and a bit of olive oil in needed (the mushrooms have a tendancy to soak up all the liquid)

4. Add a cup of vegetable broth and let come to a boil

5. Add the hand-crushed tomatoes, paste and white wine. let come to a boil

6. Add Cuoco Brand Seasoning for Macaroni with Sardines and let simmer on medium heat for 10-15 minutes (stirring often)

7. Add the grated pecorino Romano cheese

8. Add another cup of vegetable broth and let come to a boil once again

9. Add the basil

10. Add salt and pepper to taste, let simmer
Finally add Salt & Pepper to taste and let it simmer #SanGiuseppeDay #PastaConSarde

Serve with Italian-style seasoned breadcrumbs sprinkled on top.

A good complimentary salad would be Blood Orange and Fennel Salad with olive oil and white balsamic dressing,
