Pasta with White Beans

This simple recipe is taken directly from Cucina Povera and it tastes exquisite. While on a trip to the Calabria region in southern Italy, we had the privilege of tasting some homemade dishes, this version of Pasta e Fagioli Bianchi was one of them.

Ingredients
1 can Cannellini beans
1/8 lb pancetta, cut up in small cubes
1/2 small onion, diced
1 clove garlic, diced
1 cup white wine (Pinot Grigio)
olive oil
pasta water, 1 or 2 ladles – to taste
Salt and Pepper – to taste
sage a few leaves – optional

Starch
Spaghetti (broken)

Directions
1. Fry the cut pancetta in 2-3 tbsp of olive oil.

2. When the pancetta becomes sufficiently browned, add the onions and garlic.

3. As the onions begin to turn translucent and the garlic softens, add the white wine. At this point, you can begin to make the pasta.

4. Let the wine come to a boil, lower the heat and let simmer for a couple of minutes before adding the beans.

5. At this stage you can add the (optional) sage leaves. Taste and add salt and pepper to taste.

7. Let simmer and allow to reduce and thicken to your liking. Once done, add a ladle or two of the pasta water.

8.  Finally, toss in the cooked pasta (al dente).
