Who thought you can eat zucchini leaves? Well, Italians have been using as much of the plant as they can, They use it’s flowers, fruits and even the leaves. Zucchini leaves are particularly good toss in with a freshly made pasta sauce.

Ingredients
1 bunch Zucchini Leaves, cut and blanched
1/2 lb/250g pasta
2 cups Sugo di Pomodoro (Tomato Sauce)
grated Ricotta Salata cheese

Pasta
Spaghetti
Linguine
Farfalle
Pappardelle
Tagliatelli

 

Directions
1. After preparing the tomato sauce and cooking the pasta al dente, blanch the cut zucchini leaves.
