Penne alla Dalia

This pasta recipe was created as a salute to our niece who loves Jarlsberg cheese. She loves Jarlsberg so much that one day, as she visited, she ran into the kitchen and demanded ‘Uncle James Cheese.’ Yup, she affectionately coined Jarlsberg cheese as ‘Uncle James Cheese,’ ain’t that sweet?

Ingredients
1 clove garlic, finely diced
Fresh Basil
Fresh Flat-leaf parsley
2 tbsp olive oil
2-3 tbsp unsalted butter
1/2 cup milk, warmed
1/3 cup sour cream
1 egg yolk
Salt – to taste
white pepper – to taste
1/2 lb (225 g.) Jarlsberg Cheese (Uncle James Cheese)
1/4 cup grated Pecorino Romano cheese
1 tbsp 00 flour

Pasta
1/2-2/3 lb (225-360 g.) Penne

Directions
1. While cooking the pasta (al dente) begin making the cheese sauce. In a small pot, heat 1 tablespoon of olive oil and sauté the garlic.

2. Once the garlic begin to soften add butter and let melt. Fold in flour an mix until smooth

3. Add warmed milk and sour cream, let come back to temperature.

5. Add the egg yolk and mix well, until smooth.

6. As the sauce begins to thicken add the cheese with a dash of white pepper, let simmer until it’s a nice consistency.

7. Drain the cooked pasta and add the sauce, mix well.

8. Finally, add fresh chopped flat-leaf parsley with a bit of fresh basil and mix well.
