Pozole – Mexican Soup

Pozole is a Mexican soup typically served on Mexican holidays or special occasions. It has an interesting history, one that’s steeped in tradition and also a bit disturbing. You see, according to Fray Bernandino de Sahagun, who wrote the book “General History of the Things of New Spain,” the “pots of stew with corn and pieces of human flesh being eaten on special occasions.” Apparently the human meat came from the sacrifices.” https://en.wikipedia.org/wiki/Pozole> EGADS! Today, people make it with pork and/or chicken

Ingredients
3-4 pork neck bones and/or Ham Hocks
2-4 lb pork shoulder
4 cups Chicken stock (try our homemade version)
6-8 cups water
1 small onion, sliced
2-4 cloves garlic, diced
lime juice (1 lime)
1 can 28 oz (2 cups) hominy
2 tbsp avocado oil
2 tbsp olive oil
1 jalapeño pepper
1 poblamo pepper
Mexican oregano
chili powder
Bay leaves
cilantro
Salt – to taste
Ancho / Chile Sauce (see our recipe)

Optional Extras
red = 2-3 plum tomatoes
green = tomatillos

Topping
cilantro
romaine lettuce or cabbage, shredded
radishes, sliced thinly
lime wedge
avocado slices

Directions
1. Lightly rub the pork with chili powder and some salt, let sit for about 20 minutes.

2. In a large dutch oven and using 1-2 tbsp avocado oil, braise pork shoulder and neck bones and/or ham hocks. Brown on all sides and then remove.

3. Lower heat and add about 1-2 tbsp olive oil. Sauté the onions, when they begin to soften, add the diced garlic.

4. Once the garlic ‘begins’ to soften add the poblamo and jalapeño peppers, mix frequently. (you can also add chopped up plum tomatoes (red) or tomatillos (green) at this point)

5. When the peppers begin to soften add 1 cup of water, let come to a boil and add another cup of water along with the bay leaves.

6. Return the meat to the pot and let simmer (covered) for about 30-45 minutes. Keep an eye on it and rotate the meat a few times.

7. Add liquid 1 cup at a time allowing the soup to come to a boil each time. Alternate between chicken stock and water (use up to 4 cups of each).

8. Remove the pork, let cool and roughly cut and shred the meat.

10. Add 2 cups water, one at a time, allowing the soup to return to boil before adding the next.

12.  Add the hominy and let cook for an additional 30-60 minutes.

13. Add the chopped  cilantro and the lime juice.

14. Keep tasting and add oregano and salt (to taste) to help flavor the soup if needed, add  a cup of water if needed.

15. Add 1/2 tsp of the Ancho Chili Sauce and mix well.

16. Let cook for about an hour, allowing flavors to blend.

17. When serving add cilantro, shredded romaine lettuce (or cabbage), sliced thinly radishes, lime wedge an (optional) avocado slices.
