Puerto Rican Rice and Beans

Exploring your roots can be fun but we like it even more when it’s tasty! Here’s a classic Puerto Rican dish packed full of flavor. It works well with grilled meats and fish!

Ingredients

  • 1/4 lb. ham, bacon, pork belly or pancetta – chopped
  • 1 can red kidney beans (habichuelas coloradas) or pink beans (habichuelas coloradas)
  • 1-2 cloves garlic
  • 2-3 tbsp extra virgin olive oil
  • 1/2 tsp Zio’s Adobo (our homemade version)
  • 1/2 tsp  Sazón con Achiote y Culantro (try our homemade version) or 1/2 packet GOYA brand
  • 1/2 tsp turmeric – optional
  • 1/4 cup Zio’s Recaito (Puerto Rican Sofrito) (try our homemade version)
  • 1 cup brown rice (uncooked but rinsed)
  • 2 cups Chicken stock (try our homemade version)
  • 1+ cup water
  • 1-2 tbsp lime juice
  • salt – to taste
  • 2 bay leaves

 

Directions
1. Using a medium sized pot, fry the cut ham with 2 or 3 tbsp of olive oil.

2. When the ham becomes cooked to your liking, add the garlic.

3. When the garlic begins to soften add the Recaito herb-blend and cook for 3-5 minutes, stirring frequently.

4. Add the Adobo,  Sazón con Achiote y Cilantro and optional turmeric, mix well and cook for about 2 minutes.

5. Add the pre-rinsed rice, mix well and let cook for 5 minutes allowing the rice to toast a bit (similar to risotto)

6. Add 1 cup of the chicken stock and allow it to be absorbed. Cover the pot while this is being done, it will help. When adding the second cup also add the bay leaves, let it return to a boil, reduce heat and let simmer.

7. Add about a tsp salt (to taste) and then fold in the beans .

8. Add 1 cup water, mix well, cover and let let return to a simmer. Mix well and stir frequently while the rice soaks up the liquid.

9. As you let the rice cook taste and season accordingly. Cook until rice is tender, you may need to add a bit more water, this should take about 15-20 minutes.

10. Once most of the liquid is absorbed, add the lime juice, lower the heat and let cook covered for about 20-30 minutes (stir occasionally)

11. Once done, mix in some chopped flat-leaf parsley
