Comfort food conjures up fantastic and magical moments of our past, that’s why it’s called ‘comfort food.’ I’m not going to get into the psychology of why we sometimes need to touch base, recall the special times in our lives, I’m just going to go with the flow… I’m going with my feelings and embrace those familiar smell and taste sensations. Yes, they may not bring back those moments exactly but they can bring back the feelings.
This kid-friendly, special ‘macaroni’ dish was created for my wife and is a simple tribute to my mother-in-law and her cooking. My wife described the dish to me and I tried to follow the gist, it’s absolutely essential to use elbow pasta and a simple tomato sauce.
Sugo di Pomodoro (simple Tomato Sauce) or Sugo all’Amatriciana (Tomato Sauce Amatrice-Style)
Fior di Latte or Mozzarella
Pecorino Romano or Parmesan Cheese
Italian-style seasoned breadcrumbs (try our recipe)
1 lb / 500g Elbow Pasta!
1. Make your sauce and cook your pasta ‘al dente.’
4. top with grated Fior di Latte (or Mozzarella), Pecorino Romano Cheese and Italian-style seasoned breadcrumbs
