Sicilian Ragu with Peas

Tomatoes may not be “Italian” but since their introduction to Europe in the 16th century, they have become synonymous with Italian and Sicilian cooking. You could say that tomatoes are one of the greatest immigrant stories ever, potatoes being another. Zio’s Sicilian Ragu differs from the classic Bolognese Style Ragu several ways, one being it’s more tomato based (our version uses much more tomato than the traditional), carrots and celery are omitted and chicken stock is used rather than beef stock. This particular version includes peas.

Ingredients
1-2 lb. ground beef and/or veal (you can also add ground pork to the mixture)
1/4 lb. pancetta, cut into small cubes
1 28 oz. can plum tomatoes (San Marzano) hand crushed
1 6 oz. can tomato paste
1 small onion, cut
2-3 cloves garlic, diced
1/2 lemon, juice
2-3 bay leaves
Peas 1-2 cups
1 cup dry white wine (pinot grigio)
1 cup Chicken stock (try our homemade version)
1 cup water
2-3 tbsp olive oil
Basil
Salt and Pepper – to taste
Peperoncino Fiocchi (hot pepper flakes) – optional

Starch
Rigatoni
Ziti (rigati)

Directions
1. Using 1-2 tbsp of olive oil cook the pancetta.

2. Once the pancetta has browned, toss in the onions, garlic and optional hot pepper flakes.

3. When the onions begin to show transparency, add the ground beef and mix well.

4. When the meat is cooked enough, add the cup of wine, let come to a simmer

5. When simmering add a cup of chicken stock along with the bay leaves, let come to a simmer.

6. As the ragu simmers add the hand crushed tomatoes and paste.

7. Let the ragu cook for at least 10-15 minutes before adding the basil, salt and pepper.

8. Taste often and add seasoning if needed. Once you are relatively satisfied, add the lemon juice and peas.

9. Let cook for another 15-30 minutes, if the sauce is too thick, add a cup of water
