Stew – Chicken and Mushroom

As the evenings get cool or when a winter storm rolls in, we need something to help us feel all cozy and warm. Our Chicken and Mushroom stew fits the bill,  it’s warm and comforting, like a cozy blanket. 

Ingredients

  • 2-3 chicken breasts cut into chunks around 1.5-inch square
  • 1 small onion, cut
  • 2-3 cloves garlic, diced
  • 2+ cups sliced cremini mushrooms
  • 3 medium/small sized potatoes, cut into 1-inch cubes
  • 1-2 carrots, sliced
  • 1 1/2 cups peas
  • 1 cup dry white wine (Pinot Grigio)
  • 1 cup potato water (or use plain water or Chicken stock)
  • olive oil
  • 2-3 tbsp unsalted butter
  • 3-4 tbsp flour (00)
  • Flat-leaf parsley
  • Rosemary
  • 2-3 bay leaves
  • Peperoncino Fiocchi (hot pepper flakes) – optional
  • Salt and Pepper – to taste

Starch

  • Brown rice
  • Egg noodles
  • Toasted Italian bread

Directions

1. Prep chicken, cut into pieces, season (salt & pepper) and dredge in flour (lightly). Boil the potatoes.

2. In a medium sized dutch oven or sauce pot, sauté onions using 2-3 tbsp of olive oil. When the onions begin to turn a translucent, add the diced garlic and the optional Peperoncino Fiocchi (hot pepper flakes).

3. Once the garlic ‘just begins’ to soften, toss the seasoned/dredged chicken, mix well.

4. As the chicken cooks, add 1-2 tbsp of unsalted butter.

5. When the chicken has cooked sufficiently, add the cup of dry white wine and bay leaves.

6. Let return to a simmer and add the sliced carrots and let cook for 5-10 minutes.

7. Once the carrots begin to soften add the rosemary along with a cup of the water from the boiled potatoes.

8. When the stew returns to a soft boil, add the sliced cremini mushrooms. Mix well, cover and let cook until the mushrooms soften (mix often).

9. Add the cooked potatoes and mix well. Simmer for 5-10 minutes.

10. Add the peas and 1-2 tbsp more butter.

11. Let the stew simmer for about 5-10 minutes, taste and add seasoning (salt and/or pepper) if needed.

12. Add the flat-leaf parsley and lemon juice, cook for at least 10 minutes more before serving over rice, noodles or even toasted Italian bread.
