Angry Tomato Sauce

Ah, the classic Arrabbiata pasta sauce… beautifully spicy! “Arrabbiata” means “angry” in Italian and the angry in this sauce refers to the use of Peperoncino Fiocchi (hot pepper flakes) which is NOT an optional ingredient but an essential one. Sugo Al’Arrabbiata is traditionally served with penne, this simple tomato sauce (garlic, tomatoes, and red chili peppers) cooked in olive oil. We’ve added our white wine and basil for additional depth. We also suggest you make some meatballs (polpetti) so you can have that good ol’American classic, ‘Spaghetti and Meatballs.’

Ingredients

1 28 oz. can hand crushed San Marzano tomatoes
(or use 1 small quart basket of fresh plum tomatoes* or 3-4 pints of cherry tomatoes.)
1 cup water (if using fresh plum tomatoes)
2 cloves garlic
1 cup white wine (pinot grigio)

3 tbsp olive oil 1/2 lemon (juice) fresh basil
2 bay leaves
Peperoncino Fiocchi (hot pepper flakes) – NOT optional, essential.
salt and pepper

Pasta

Penne
Maccheroni

Spaghetti

Topping

freshly grated Pecorino Romano cheese

Directions
1. In a medium sized dutch oven or deep sauce pan, sauté the minced garlic and Peperoncino Fiocchi (hot pepper flakes) in olive oil.

2. Once the garlic softens add white wine and let come to a boil.

3. Add the hand crushed tomatoes (If using fresh plum tomatoes or cherry tomatoes, add 1 cup of water and let come to a simmer before adding the cut up plum tomatoes.) Let come to a boil and lower the heat to allow it to simmer.

4. Add 2 bay leaves and fresh basil (or frozen).

5. Add the lemon juice. Let simmer for at least 20 minutes.

6. Taste and add salt and pepper (to taste)

7. Simmer for at least 30 minutes or more!
