An incredibly healthy and delicious comfort food that’s easy-to-make, our Escarole and Bean soup is a perfect way to warm up a cool fall or winter day. During the fall and winter, Italians tend to eat more beans, legumes. soups and stews. These are the ingredients that are available and escarole has become a favorite!

Escarole is an endive that has leaves that are a bit broader than the common endive and also less-bitter. It can be sautéed, cooked in soups and stews as well as eaten raw in green salads. Nutritionally, it’s particularly high in vitamin K but also a good source of folate, pantothenic acid (vitamin B), beta-carotene, vitamin A and maganese.

Ingredients
1/4-1/2 lb. Pancetta – diced (optional)
1 head escarole chopped
1/2 cup fresh flat-leaf parsley – roughly cut
1 Onion – diced
2 Cloves garlic – finely diced
2 medium carrots – cut into pieces
4 Stalks celery – cut into pieced
2-3 fresh ripe plumb tomatoes (roughly diced) (optional)
2 cans Borlotto, Cannelini, White Kidney or Navy Beans
1 cup white wine
3-4 cups chicken stock (recommended) or vegetable Stock
2-3 cups water
3-4 tablespoons olive oil
fresh juice from 1 small-medium sized lemon
2-3 Bay leaves
Peperoncino Fiocchi (hot pepper flakes) (optional)
Salt and pepper

Directions
1. Heat 2 tablespoons of olive oil and fry the diced pancetta until beginning to brown.

2. Add the onions, then garlic and hot pepper flakes, cook until the onions show signs of transparency.

3. Add the celery and carrots and cook until beginning to soften

4. (optional) Add the diced tomatoes and let cook for a few minutes
5. add 1 cup of white wine and let come to boil, then add the bay leaves.

6. add a cup of water, followed by a cup of broth, one cup at a time (waiting for it to boil before adding more liquid)

7. add the beans beans, let the soup come to a boil

9. Add lemon juice

8. Add the escarole, cook for about 10 min.

10. Add fresh parsley, salt and pepper to taste…

Serve with freshly grated Pecorino Romano or Parmesan cheese on top.
