BBQ’d Eye of Round

The Eye of Round may be an inexpensive cut of beef but it can be made into a delectable cut by following some simple steps.

Ingredients
2-3 lb Eye of Round
Zio’s Steak Rub
Coarse Sea Salt

Marinade Ingredients
1/2 cup red wine (dry)
6 oz coffee soda (Brasilena Brand from Calabria, Italy)
2-3 cloves of garlic, slivered
1/2 tbsp pepper corns, slightly crushed
2-3 bay leaves
1/4 cup oil
Peperoncino Fiocchi (hot pepper flakes) – optional

Starch Suggestions
Roasted Rosemary Potatoes
Mashed Potatoes

Directions
1. Cut slivers in beef (in the grain) and insert garlic slivers.

2. Place beef into a container or large ziplock bag, mix with marinade and marinate beef for 12-48 hours in the fridge, rotating every 6-12 hours.

3. About an hour before cooking, remove the meat from the marinade and allow to drain. Pat dry and rub with Zio’s Steak Rub and some extra Coarse Sea Salt.

4. Set grill (oven) for about 250F and let cook until center is about 150F-160F
