Beef Bourguignon

Beef Bourguignon is a classic French peasant dish originating from the wine region of burgundy. According to Wikipedia, “It is a stew prepared with beef braised in red wine, traditionally red Burgundy, and beef broth, generally flavoured with garlic, onions and a bouquet garni, withpearl onions and mushrooms added towards the end of cooking.” We forgo the pearl onions and include mushrooms earlier in the procedure. In lieu of the traditional bouquet garni, we have simplified the spices to allow the natural flavor of the dish to shine.

Ingredients
1-2 lb. beef chunks around 1.5-inch square
2-3 strips bacon, cut up into small pieces
oregano
2 bay leaves
1 small onion, cut
2-3 cloves garlic, diced
2-3 cups sliced cremini mushrooms
2 medium sized carrots, cut into 1/2 inch pieces
1.5-2 cups dry red wine (Trad. Bordeaux or Burgundy)
1.5-2 cups beef stock
2 tbsp tomato paste
olive oil
2-3 tbsp unsalted butter
Salt and Pepper – to taste
Peperoncino Fiocchi (hot pepper flakes) – optional
Flat Leaf Parsley

Starch
Egg Noodles
Roasted or Boiled Potatoes
Crusty Italian Bread

Beef Prep
Season the beef with salt, pepper and dry oregano

Directions
1. Cook bacon and remove.

2. add 1 or 2 tbsp of olive oil, sauté the onions and garlic

3. Add the beef and cook until sufficiently browned (about 10 minutes).

4. Once the beef is browned, add butter and let cook for 5-10 minutes.

5. Toss in the loosely cut carrots and cook for about 5-10 minutes (covered). Mix every few minutes.

6. As the carrots ‘stew’ ad begin to soften, add the mushrooms, cover and cook for about 5 minutes or so, mixing frequently.

7. One the mushroom are cooked enough, add about 1.5-2 cups red wine, cover and let return to simmer.

8. As the Bourguignon simmers, add a couple of bay leaves and tomato paste. Mix well and let turn to a simmer.

9. After a few minutes of simmering, add about 1.5-2 cups of beef stock.

10. As the Bourguignon simmers, taste and add salt and pepper along with some more butter.

11. When the butter is melted and the Bourguignon simmers, add the cooked bacon and fresh parsley.

12. Also the Bourguignon to stew, as long as you like until the desired consistency is achieved. Taste and add salt and/or pepper if needed.
