Cajun Style Tilapia Fillets (fish)

Tilapia is a popular fish, it has a nice mild flavor that’s not overwhelming, it’s texture is flaky and it’s flesh light, soft and delicate. It adapts well to various cuisines including Mediterranean, South American, Caribbean and Asian styling. This particular recipe’s influence is  a shout out to the spicy Louisiana’s Cajun community.

Ingredients
2-4 fresh tilapia fillets
1 small onion, cut
2-3 cloves garlic, diced
1 1/2 cups sliced cherry tomatoes
1 red pepper, diced
1 lime (juice)
Cajun/Creole Spice Blend
1/2 cup white wine (Pinot Grigio)
olive oil
2-3 tbsp unaltered butter
Salt and Pepper to taste

Starch
Brown rice

1/2 – 3/4 cup white wine
2-3 tbsp olive oil

Tilapia Dredge
Salt
Cajun/Creole Spice Blend

Directions
1. On medium-high, Pre-heat 2-3 tablespoons of olive oil and 1 tbsp butter

2. Cook spice/flour dredged fillets on both sides, remove and set aside (keep warm)

3. Add 1 tbsp of olive oil and 1 tbsp of butter. Sauté onions, when they begin to turn a bit translucent, add the diced garlic.

4. Once the garlic ‘just begins’ to brown, add the red pepper.

5. Cook the peppers until the become tender and then add the cherry tomatoes. Cook until the tomatoes break down and begin to create the sauce.

6. Add the leftover wine marinade, let come to a boil.

6. Add 1 tbsp of Zio’s Cajun/Creole Spice Blend and some salt (to taste)

7. Add the lime juice and parsley, cook for 5-10 minutes

8. Pour over tilapia and serve hot with brown rice
