Chicken Pot Pie

One comfort food that’s definitely in the top 10 in our home is Chicken Pot Pie. Who doesn’t love a Pot Pie? According to Wikipedia, pot pies may have been originally created in Greece, yup… the home of gyros, souvlaki and spanakopita. “The Greeks cooked meats mixed with other ingredients in open pastry shells, and these were called Artocreas.” We can see evidence by way of how they use phyllo pastry but the version we all recognize at pay pies use another type of flakey pastry… pie dough. We’ll explore using phyllo pastry in another posted recipe.

Ingredients
2-3 chicken breasts cut into small chunks
2-3 strips bacon, cut up into small pieces
1 small onion, diced
2-3 cloves garlic, diced
1 – 1 1/2 cups sliced cremini mushrooms, sliced
1-2 carrots, cut into small pieces
2-3 stalks celery, cut into small pieces
1/2 – 3/4 cup peas or 1 red bell pepper
1/2 – 3/4 cup corn
1 lb potatoes, cubed
1 cup dry white wine (Pinot Grigio)
olive oil
2-3 tbsp unsalted butter
1 cup Chicken stock (try our homemade version)
Rosemary
flat-leaf parsley
Salt and Pepper – to taste
Peperoncino Fiocchi (hot pepper flakes) – optional

Pie Pastry Dough
Since I’m using a dear brother-in-arm’s personal recipe, you guys on your own. I suggest you search the web, choose a simple one that uses LARD!

Directions
1. After making the dough and letting it sit in the fridge to let cool,  you can marinade the chicken with 1/4 cup white wine, 1/8 cup Worcestershire sauce and olive oil.

2. Cook the bacon bits, boil the potatoes, peas and corn (niblets). Save the bacon fat to use later.

3. Remove the chicken from the marinade, dredge with flour and season with salt and pepper (reserve the marinade).

4. In a medium/large dutch oven or sauce pot, using olive oil and some of the bacon fat from the bacon, sauté the onions and, diced garlic and optional Peperoncino Fiocchi (hot pepper flakes) (optional).

5. Once the onions turn translucent and the garlic begins to soften, add the seasoned chicken along with 2 tbsp butter

6. When the chicken is cooked add the carrots and celery, mix well and add some more butter

7. When the carrots and celery begin to soften, add the white wine and reserved marinade, mix to deglaze and let come to a boil.

8. Add the cup of chicken stock and allow to return to a boil, once again.

9. Once it has returned to a boil you can add the sliced mushrooms and a small sprig of rosemary.

10. As it is cooking, taste and season with salt and pepper to taste.

11. Once it is seasoned to your satisfaction, add the boiled potatoes and maybe even more butter.

12. Let cook (taste and season if needed), add the corn and peas, mix well.

13. Finally add some fresh chopped parsley, lemon juice and the bacon bits. Cook for about 5-10 minutes or until it reached the consistency you like (add water if too thick).

14. Preheat the oven to 425F and grease the pie dish with butter.

15. Line with rolled dough, fill and cover with dough (puncture so steam can be released)
