Chili Con Carne (Texas-style)
Estilo de Texas Chili Con Carne

Texas-Style’ Chili Con Carne is traditionally a spicy stew-type dish made with predominately beef and chili peppers. In this recipe we try to play homage to the traditional Texas-Style Chili. While beans and tomatoes were added to the recipe in later years, ‘Texas-Style’ is still considered the Texan official state food. For the more ‘common’ chili, check out our “Chili Con Carne.”

2 lb. Flank or stew beef, cut into small cubes or strips (use ground beef if you like)
1/4 lb pork belly or 4 strips of bacon (or pancetta) cut into small 1/4-inch cubes
3-4 cloves Garlic, crushed and minced
1 onion, chopped
1 or 2  Poblano chili peppers, cut into 1/8-inch strips
1 green bell pepper,cut into 1/4-inch strips
1 red bell pepper,cut into 1/4-inch strips
1 or 2 Jalapeño peppers,cut into thin strips
1 Chipotle pepper (stewed) with some adobo sauce (chopped)
1 ladle (1/2 cup) crushed (preferably by hand) Plum Tomatoes,
Tabasco Sauce – to taste
1 Lime, freshly squeezed juice
Olive oil
1 cup beef stock
1 cup red wine (for marinade)
2 – 4 tbsp oregano (Mexican, if you can get it)
1 cup fresh cilantro, chopped
Chili powder – to taste
dash cinnamon, ground
salt and pepper – to taste
Flour, for dredging

Preparing the Meat
1. Marinade meat in red wine, Worcestershire sauce and olive oil for at least 30 minutes
2. Remove meat from marinade and let drain… save marinade!
3. Dredge the chunks of beef in a mixture of flour, salt, pepper and chili powder.

1. In a large deep skillet, or dutch oven, preheat 2-3 tbsp of olive oil to medium heat. Fry the pork belly pieces until well done and browned.

2. Toss in the the onions and the garlic.

3. When the onions begin to turn translucent and the garlic begins to show transparency add the beef and let brown.

4. When the beef browns add the fresh Poblamo and Jalapeño peppers. Cook until peppers begin to soften.

5. Then add the remaining red and green peppers.

6. Once the peppers soften, add the stewed Chipotle pepper (diced w/a bit of the adobo sauce). Cook for an additional 5-10 min.

7.  Add the left over marinade.

8.  Add some oregano, black pepper more chili powder, mix well and let simmer for 10-20 minutes.

9. Add 1/2 – 1 cup beef stock and let come to a boil.

10. Add 1 ladle (1/2 cup) of the hand crushed tomatoes.

11. Lower heat to minimum and add salt, pepper and more chili Powder (if needed) and even Tabasco sauce (if you dare for more heat).

12. Finally add the chopped cilantro and lime juice.

Garnish with A dollop of sour cream, lime zest, thinly-sliced Poblamo peppers and cilantro on top.
