Eggplant stuffed with a hearty Bolognese Sauce paired with a nice green salad can make a delightful meal, which happens to be low carb (for those who care LOL).

Ingredients

  • 1-2 Eggplants, cut in half lengthwise
  • Bolognese Tomato Ragu (try our homemade version)
  • olive oil
  • Mozzarella
  • Salt and Pepper – to taste

Directions

1. Prep eggplant, cut lengthwise, scoop out center (leave about 1/3-inch flesh), poke small holes in skin with a fork and brush with olive oil.
