Eggs in Purgatory (Uova in Purgatoria) or Shakshuka, as it’s known in Tunisia and other northern African nations, is a quintessential Mediterranean dish. While it’s typically made using fresh ripened tomatoes and spiced with Arabic spices such as cumin and turmeric, the Italians have their own interpretation. Ours is based on the Italian version. We use our recipe for a basic Pizza sauce which uses basil, oregano and hot pepper flakes as the main herbs.

Ingredients
4 Eggs
1-2 cups Pizza Sauce (try our homemade version)
Grated Pecorino Romano Cheese
Peperoncino Fiocchi (hot pepper flakes) – optional

Starch
Italian Bread (optional)

Directions
1. In a frying pan, heat the sauce to a simmer. You can either prepare the tomato sauce from scratch or use leftover sauce.

2. Slip the eggs into the sauce carefully, do not break the yolks!. We break the eggs into a small bowl prior to adding them to the sauce.

3. Cover the pan and let the eggs cook on top until they turn white.

4. Sprinkle the grated Pecorino Romano cheese on top.

5. Cover once again for a minute or two or place in broiler (f you prefer the egg yolks to harden).

6. Remove from oven and toss some chopped flat-leaf parsley on top!

7. Serve on top of crusty Italian bread!
