The inspiration for this recipe is our own Swordfish Rolls Cooked in the Scillese Way, a salute to Scilla (Reggio Calabria, Italy). We decided to try and grill the fish and create the sauce separately, we feel it worked out very well. Swordfish (pesce spada) is is a specialty in the region. This recipe can be used with other types of fish as well. Using typical ingredients such as capers, Calabrese olives, spicy peppers and firm fish like swordfish, shark, tuna or salmon seem to work the best, at least for grilling. So, fire up your lump-coal BBQ and enjoy some grilled fish!

Ingredients
Swordfish, salmon or other firm fish fillets or steaks
1 clove garlic, slivered
1/2 pint cherry tomatoes, halved
15-20 infornate (black, oil cured) olives
15-20 Calabrian (green, cured) olives
1-2 tbsp capers, brined
1 Lemon, juiced
white wine (Pinot Grigio)
olive oil
1 tbsp unsalted butter
Basil
Flat-leaf parsley
Salt and Pepper to taste
1 hot chili pepper (chopped) or Peperoncino Fiocchi (hot pepper flakes) – optional

Starch
Brown rice

Directions
1. Marinate the fish in white wine and olive oil for about 10-15 minutes before gilling. Add juice from 1/2 lemon a few minutes before removing fish from the marinade (save the marinade for use later).

2. Pat dry the fish and season with salt and pepper.

3. Grill the fish.

4. In a shallow sauce pan, set to medium/low, heat 2-3 tbsp of olive oil and sauté the garlic.

5. When the garlic softens add the olives and capers, let it cook for a few minutes.

6. Add the cherry tomatoes along with the hot peppers.

7. When the cherry tomatoes and peppers begin to soften add the reserved marinade and let come to a simmer.

8. After a few minutes, add the unsalted butter.

9. Finally, add the basil and flat-leaf parsley.
