Polpette con Limone e Prezzemolo

Traveling inspires, and when you travel to Italy be prepared, it will be continuous. We love to try local dishes made with local ingredients, it’s one of the reasons we enjoy our travels so much. While visiting Taormina in Sicily, we discovered a variation on the venerable Italian meatball (polpette). Here’s our interpretation of  “Polpette Arrosto Nelle Foglie di Limone (meatballs wrapped in lemon leaves),” a dish we sampled at Ristoronte Don Camillo, a local restaurant. It might be difficult to find lemon leaves where we live but that doesn’t deter us.

Ingredients – Meatballs
1.5-2 lbs. ground veal or beef
1 egg
Zest (grated rind) from 1 lemon
1 clove garlic, crushed and diced
1/2 onion, diced
fresh flat-leaf parsley
1-2 tbsp olive oil
Salt and pepper to taste
1 cups Italian bread, made into crumbs. (Use whole wheat or multigrain if possible)
1/4 cup grated Pecorino Romano cheese or Parmesan, if you prefer

Ingredients – Broth
1 cup dry white wine, Pinot Grigio
1 cup vegetable stock or use Chicken stock (try our homemade version)
Juice of 2-3 lemons
olive oil
2-3 tbsp unsalted butter
flat-leaf parsley
Salt and Pepper to taste

Directions
1. In a large bowl, thoroughly mix the ingredients for the meatballs

2. Roll the meat mixture into balls the size of a small ice cream scoop and fry using a mixture of avocado oil and olive oil.

3. When the meatballs are done, remove and toss with the lemon juice from 1 lemon.

4. In a small dutch oven or sauce pan heat up 1-2 tbsp of unsalted butter with 2 tbsp of olive oil.

5. When the butter is melted add a cup of the dry white wine.

6. Once the wine comes to a simmer add the cup of stock.

7. When the broth returns to a simmer, add the meatballs.

8. As the broth simmers, add the juice of the remaining lemons (1 or 2 – depending on the size)

9. Let the broth simmer and reduce to about 50%, about 20 minutes or so. Finally add some chopped flat-leaf parsley before serving.
