Mongolian Grilled Beef
by James Belardo

The dish Mongolian beef is mostly served in Asian-style restaurants in North America but was first introduced in Taiwan ‘where Mongolian barbecue restaurants first appeared’ (according to Wikipedia). Wikipedia continues, “Mongolian beef is among the meat dishes developed in Taiwan where Mongolian barbecue restaurants first appeared. Thus, none of the ingredients or the preparation methods are drawn from traditional Mongolian cuisine.”

We were introduced to a version at a few restaurants we frequent and fell for it’s intense beef flavor with the spicy, savory and slightly sweet marinade.

Ingredients
2 lb skirt or flank steak, sliced against the grain into 1/4-inch thick slices
1 small white onion, slivered
2 tbsp avocado oil
white pepper – to taste

Marinade
1-2 tbsp ginger, minced
2-3 cloves garlic, crushed and pressed
1 handful chopped cilantro
2 tbsp sesame oil
1 tbsp soy sauce
1/4 cup oyster sauce
1 1/2 tbsp Asian chili/garlic sauce
2 tbsp wine vinegar
lime juice
1/2 cup water

Garnish
green onions
cilantro
sesame seeds

Directions
1. Marinate steak for 2+ hours. Remove steak from marinade and let sit until it reaches room temperature (reserve marinade).

2. Using a cast iron skillet, add a splash of avocado oil, fry the beef and onions.

3. As the onions become translucent and the beef releases it’s juices, season with some white pepper.

4. It a small sauce pan, heat up the reserved marinade and let reduce about 50%

5. As the liquid begins to reduce, fire up your oven and set to grill. (as an alternative, use your lump coal or gas BBQ). Once the oven is up to temperature place cast iron skillet onto rack just below the heat.

6. Once the beef is seared enough, remove from oven and toss with some of the reduced marinade (just enough). Garnish with sesame seeds, fresh chopped green onions and cilantro.
