Piccata – Tilapia (fish)

Piccata typically refers to the way a fillet is coated, sautéed and served with a lemon and caper based sauce. Originally made with veal, chicken and fish piccata works extremely well.

Ingredients
2-4 tilapia fillets
flour for dredging
2 cloves garlic, diced
4-6 tbsp olive oil
3/4 cup white wine (pinot grigio)
1 tablespoon butter
1 Lemon (juice)
lemon zest
1/4 cup capers (in brine), drained
Peperoncino Fiocchi (hot pepper flakes) – optional
salt and pepper – to taste
Flat-leaf Parsley

Variations

Tilapia (fish)

Marinade
1. Marinate the fish in  1/3 cup white wine and 3 tbsp olive oil for about 1/2 hour.

2. Remove the fish from the marinade (save marinade) and pat dry with paper towels.

3. Dredge the fish in flour, salt and pepper

Directions
1. In a large skillet, bring 3 tbsp olive oil and 2 tbsp butter and fry the fish until browned on both sides, remove and set aside (keep warm).

2. Add 2 tbsp olive oil and cook the garlic and peperoncino (hot pepper or hot pepper flakes – to taste)

3. add the capers and let cook for a few moments.

4. Add 2 tbsp butter, let melt and then add the leftover marinade (along with 1/2 cup of wine). Let come to a simmer and reduce to about 50%.

5. Add the lemon juice and toss in some fresh parsley.

6. Pour sauce over fillets, garnish with some lemon zest and parsley

Some say Scallopini is best served with a nice vegetable and rice or potatoes. A light vegetable-based pasta would also work well.
