Pork Chops and Peppers

This recipe hints of Portuguese and western Mediterranean cuisine. This dish goes well with either rice or potatoes.

Ingredients
4-6 pork loin chops
3/4 onion, diced
2-3 cloves garlic, diced
1 red pepper*
1 green pepper*
1 cup hand crushed tomatoes
3/4 cup white wine (Pinot Grigio)
1/4 cup white balsamic or red wine vinegar
olive oil
fresh lemon juice (1/2 medium-large lemon)
3 tbsp Pimenta (try our homemade version of Pimenta)
Peperoncino Fiocchi (hot pepper flakes) – optional
Turmeric
Spanish Paprika (smoky)
Salt and Pepper  – to taste
flat-leaf parsley

* for Peppers, you can use 1/2 red, 1/2 green. 1/2 orange, 1/2 yellow

Marinade (save)
Red Wine
white balsamic vinegar or whine vinegar
olive oil

Pork Spice
salt and pepper
Spanish Paprika (smoky)
Turmeric

Directions
1. On medium-high, Pre-heat 2-3 tablespoons of olive oil in a large pan. Cook seasoned pork until browned on both sides. Remove cooked pork and set aside.

2. Add 1 tbsp olive oil to the pan and then toss in the onions, when they begin to turn translucent, add the diced garlic and the optional Peperoncino Fiocchi (hot pepper flakes).

3. Once the garlic ‘begins’ to brown, add the peppers and let them cook until they begin to soften.

4. Add the marinade/white wine, let come to a simmer.

5. Add the tomatoes and pimenta, let simmer cook for about 5-10 minutes

6. Reintroduce the pork to the sauce and let cook for 5-10 minutes.

7. Finally, add the lemon juice and spices (salt, pepper, Spanish Paprika (smoky) and turmeric), let simmer for a final 5-10 minutes.

Serve with Potatoes or Rice
