Pork Chops with Sun-dried Tomatoes and Capers

Not your typical pork chop recipe, we use Sun-dried tomatoes to add sweetness and more depth to the typical picatta sauce (lemon and capers). This combination of ingredients do not need any additional spices other than a small amount salt and black pepper.
4-6 pork chops
1 cup dry white wine (pinot grigio)
1/2 vidalia onion, slivered
2-3 cloves garlic
1/2 cup sun-dried tomatoes, sliced
1/8 cup capers, rinsed
1/2 lemon (juice)
olive oil grape-seed oil
flat leaf parsley
salt and black pepper – to taste
Marinate pork chops in white wine, olive oil and lemon juice (add the lemon juice about 15-minutes before you’re ready to cook). Remove chops from marinade but do not throw away the marinade, set aside.
