Pork Cutlets with Scapes and Sun Dried Tomatoes

Garlic scapes are a wonderful seasonal vegetable and a joy to use while celebrating summer. Using scapes are also a great way to reduce waste as the garlic scapes are removed to focus all the garlic’s energy into bulb growth. We prefer to cook our scapes but they can be eaten raw.

Ingredients
4 pork cutlets
3/4 cup cut scapes
1/2 cup slice sun-dried tomatoes
1 sprig rosemary
1/4 cup white wine
3-4 tbsp olive oil
1/2 cup Beef Stock (try our homemade version)
Rosemary
1/2 lemon (juice)
Salt and Pepper to taste

Peperoncino Fiocchi (hot pepper flakes) – optional

Directions
1. Marinade pork in 1/4 cup white wine (pinot grigio) and 1 tbsp olive oil for about 20 minutes or so.

2. Pat the cutlets dry, season with salt, pepper and hot pepper flakes (optional).

3. Using about 3-4 tbsp of olive oil, fry the cutlets and then remove, set aside

4. Sauté the scapes, when they become tender add the sun-dried tomatoes and continue to cook for about 5-minutes.

5. When the sun-dried tomatoes begin to soften add 1/2 cup beef stock. Mix well (deglaze)

6. After cooking for a few minutes, allowing the liquid to reduce a bit, return the pork to the pan and cover.

7. After a few minutes add the lemon juice and allow to cook for about 3-5 minutes before serving.
