Scallopini – Pork with Cremini Mushrooms in Moscato Sauce
Scallopini – Maiale con Creme di Funghi nel Moscato Salsa

A fairly simple seasoned pork cutlet served with a sweet and savory wine-based sauce. The technique of browning the onions and garlic lend a nice balance to the sweet Moscato wine.
2-4 pork cutlets
2-3 cloves garlic
1 cup sliced Cremini mushrooms
3 tbsp olive oil
1 cup Moscato white wine (sweet)
2 tbsp freshly squeezed lemon juice
4 tbsp unsalted butter
Flour (for dredging)
salt and ground black pepper – to taste
Pound the cutlets (not the fish fillets) if you prefer. Coat with flour mixed with a bit of rosemary, salt and pepper.
