Scallopini – Pork with Cremini Mushrooms in Moscato Sauce

A fairly simple seasoned pork cutlet served with a sweet and savory wine-based sauce. The technique of browning the onions and garlic lend a nice balance to the sweet Moscato wine.

Ingredients
2-4 pork cutlets
1/2 onion
2-3 cloves garlic
1 cup sliced Cremini mushrooms
3 tbsp olive oil
1 cup Moscato white wine (sweet)
2 tbsp freshly squeezed lemon juice
4 tbsp unsalted butter
Flour (for dredging)
rosemary
salt and ground black pepper – to taste
Flat-leaf parsley

Variations
Veal
Chicken
Tilapia

Preparation
Pound the cutlets (not the fish fillets) if you prefer. Coat with flour mixed with a bit of rosemary, salt and pepper.

Directions
1. Preheat 3 tbsp olive oil and 1 tbsp butter and sauté onions and garlic.

2. when the onions begin to turn slightly transparent and soften, pan fry dredged and seasoned cutlets (remove when done)

3. When meat is removed, add 1 tbsp olive oil and 1 tbsp butter.

4. Cook mushrooms

5. Deglaze with sweet wine (Moscato)

6. When the wine begins to simmer, add 2 tbsp butter and let reduce.

7. When liquid is reduced about 60% add the 2 tbsp of lemon juice. Cook for an additional 2-5 minutes before serving.

8. Add some fresh flat-leaf parsley
