Puerto Rican BBQ’d Chicken

I love exploring culture through food and since I’m part Puerto Rican, what better way than to celebrate is with a BBQ. We suggest using a smoker-style BBQ like a Kamado Joe, a Big Green Egg or other ‘coal’ BBQs although a conventional gas BBQ or oven will work well too. Keep the coals burning low’n’slow for this one (set the temp around 225F.

Ingredients
2-4 chicken breasts, or any part of the bird.
2-4 cloves garlic, crushed and pressed
white wine (pinot grigio)
1 Lime Juice
Fresh Oregano
1 tbsp Zio’s Adobo (try our homemade version)
1 tsp salt
Peperoncino Fiocchi (hot pepper flakes) (optional)

Directions
1. Marinate chicken for up to 3 hours in olive oil and white wine.

2. Remove chicken from marinade; add crushed and pressed garlic, fresh oregano, lime juice, optional Peperoncino Fiocchi (hot pepper flakes), Zio’s Adobo and salt to the marinade.

3. Coat chicken with spiced marinade and let sit for 10-20 minutes

4. BBQ the chicken on low heat (around 200F-250F) basting with the left over marinade occasionally.

5. Drizzle a bit of olive oil before serving.
