Puerto Rican Style BBQ’d Rib Eye Roast

I am of Puerto Rican and Italian decent, and since I grew up on the Italian side I didn’t have much exposure to Puerto Rican cuisine. I also left New York as a young teenager and moved to Canada, there’s no Puerto Rican community, let alone restaurants there. While visiting Orlando, Florida we found a wonderful place of inspiration, Tropico Mofungo, a wonderful authentic Puerto Rican restaurant. In just one sitting I was inspired to do some research and start on my quest to create some Puerto Rican inspired dishes.

This recipe uses a classic Puerto Rican style adobo spice blend.

Ingredients
2-3 lb Pork Rib eye roast
Zio’s Brine – Puerto Rican Pork or Chicken
Zio’s Adobo (try our homemade version)
a bit of onion, for bed
1 tomato, for bed
Salt and Pepper to taste

Baste
1 clove garlic, crushed and pressed
3 tbsp olive oil
4 tbsp orange juice
1/2 lime, juice
add a light lager beer

Starch
Brown rice (w/turmeric)
Puerto Rican Rice with Pigeon Peas

Directions
1. Brine for 12-24 hours

2. Remove meat from brine and let drain for 10 minutes. Rub the meat with Zio’s Adobo and let sit for 30-60 minutes.

3. Start your lump coal BBQ allowing it to come to 225F-250F.

4. Prepare the shallow pan by placing sliced onions and tomato slices to place the meat.

5. Lightly baste the meat using the baste mixture described above and then place on the bed of onions and tomato, drizzle with a bit of olive oil.

6. Once the BBQ comes to temperature, use a deflector plate so that you are not cooking directly over the grill. Place the meat in the BBQ (insert thermometer in meat) and close lid.

7. Baste at 30, 60 and 90 minute intervals and then turn the meat over (basting once again)

8. Keep basting… at the 120, 150 minute marks, flip again at 180 min and let cook for a final 30 minutes.

9. Remove meat from pan and cover with foil. Reserve drippings.

10. Place the pan drippings (including tomatoes and onions) in a sauce pan, bring to simmer and begin reduction

11. Use 3-4 tbsp of the baste and let sauce reduce until it reaches a nice consistency.

12. Slice the meat and serve with a bit of sauce on top.
