Puerto Rican Recaito Shrimp

A small culinary jewel that’s typically overshadowed by Jamaican or Cuban cuisine is Puerto Rico. The food of Puerto Rico is blend of  Spanish and the indigenous Taino indian cuisine which is similar to both Cuban and Haitian food. This mildly spicy recipe works especially well with shrimp but will work with chicken too.

Ingredients
1-2 lb shrimp (or thawed frozen shrimp)
1 clove garlic, diced
1/2 onion, diced
1/4 cup dry white wine
2-3 tablespoons olive oil
Flat leaf parsley

Ingredients for the Sofrito Sauce
1/4 cup Zio’s Recaito (Puerto Rican Sofrito) (try our homemade version)
1/2 cup hand crushed tomatoes
1 tsp  Sazón con Achiote y Culantro (try our homemade version) or 1/2 packet GOYA brand
1/2 lime, juiced

Dirctions
1. Make the Sofrito Sauce. Mix the Recaito, hand crushed tomatoes, lime juice and sazón. Blend until smooth.

2. In a large skillet, sauté the garlic and onion in the olive oil until the onion is translucent and soft.

3. Add the shrimp and cook for a few minutes minutes.

4, add the wine and let come to a simmer.

5. Add the Sofrito Sauce, mix well and simmer for about 5 minutes, letting the sauce seep into the shrimp.

6. Serve on rice, garnish with flat leaf parsley.
